Redcurrant Gin recipe taken from Sensational Preserves

(For you Greenhouse Girl, and others who have more redcurrants that you could shake a currant bun at!)

Tis an easy one - 1 1/4 pounds redcurrants
10 oz caster sugar
27 fl/oz bottle of gin

Crish the currants with the sugar, then transfer the mix into a jar. Pour in the gin, cover and seal. Leave in a cool dark place for 3 months, shaking daily for a month, then just when you remember.

Strain, then I pass it through a muslin bag to get rid of as much sediment as possible. Bottle - if you can!

I guess you could then use the pickled currants in something...what I don't really know, maybe a triffle or pavlova. I shall be buying my bottle of mothers ruin tomorrow to get the brew under way.

Hic ... hic ... the thoughts of all that gin is already making me tipsy! But all in a good cause eh? Just got to drink the gin to use up the currants ...
Thanks for taking the time to post the recipe Emma ... I’ll be off picking the currants at the weekend ... wonder if it works as well with black currants ... what do you think?

I make sloe gin, and I once saw a suggestion for what to do with the sloes after you've finished with the, They said to drain them and let them dry off a bit, then cover them in chocolate and let cool. Apparently they are very tasty! I haven't tried doing them as chocolate gives me migraine and makes me very sick.
Could you try something like that for the redcurrants?

Isn't black currant liqueur Creme de Casis, so I guess that is what you would end up with. YUM! I love the scent of blackcurrants, and have plenty so may give both a try.

I have heard that about Sloes lily, but find them sooooooo bitter that I don't think I could face eating them, however, I am sure I could work something out for the red currants.

Emma ... I've just been reminiscing about some Sloe Gin I was given some years back ... absolutely gorgeous ...
And Lilymarlene’s tip sounds a good plan ... I’m abit of a chocoholic so maybe I could make the equivalent of nut clusters, but with redcurrants .. oh I see my weekends drifting into drinking gin and eating chocolate covered currants in about 3 months time ...

Oh greenhouse girl, how could you tempt me with such delights! I was thinking of truffle like sweets, but instead if having something boring like coconut or chopped nuts within the Gnache like goo, you would have sweet gin soaked redcurrants!

I agree Judith, and I love it in natural yoghurt. In fact, as I sort it, I eat so much that I forget all about the ice cream! :)
